  • 2 stalks celery, diced

  • 6 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 cup orzo pasta
  • 1 lemon, zested and juiced
  • 2 cups spinach or kale
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat, add carrots and celery and cook for 5-7 minutes. Then, add garlic.
  2. Cook the chicken: Season chicken breasts with salt and pepper, then sear in the pot for 3-4 minutes on each side.
  3. Pour in the broth: Add chicken broth and bring to a gentle simmer, then stir in oregano.
  4. Add the orzo: Stir in orzo and simmer for 10-12 minutes until al dente.
  5. Shred the chicken: Remove the chicken, shred it, and return it to the pot.
