- 1 pound boneless, skinless chicken breasts
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried oregano
- 1 cup orzo pasta
- 1 lemon, zested and juiced
- 2 cups spinach or kale
- Salt and pepper to taste
Instructions
- Sauté the aromatics: In a large pot, heat olive oil over medium heat, add carrots and celery and cook for 5-7 minutes. Then, add garlic.
- Cook the chicken: Season chicken breasts with salt and pepper, then sear in the pot for 3-4 minutes on each side.
- Pour in the broth: Add chicken broth and bring to a gentle simmer, then stir in oregano.
- Add the orzo: Stir in orzo and simmer for 10-12 minutes until al dente.
- Shred the chicken: Remove the chicken, shred it, and return it to the pot.
- Finish with greens and citrus: Mix in spinach (or kale) and cook until wilted, then stir in lemon zest and juice.
- Serve it up: Ladle into bowls and enjoy!
