- 1 pound Chicken Breast (skinless, boneless)
- 1 can or 2 cups fresh Pineapple Chunks
- ¼ cup Soy Sauce
- 2 tablespoons Brown Sugar
- 3 cloves Garlic (minced)
- 1 tablespoon Ginger (grated)
- 1 Bell Pepper (diced)
- 1 medium Onion (chopped)
- 2 cups Rice (uncooked, jasmine or basmati recommended)
- 4 cups Chicken Broth
- 2 tablespoons Olive Oil
Instructions
- Marinate the chicken: In a bowl, mix the soy sauce, minced garlic, grated ginger, and brown sugar. Add the chicken breast and let it marinate for at least 30 minutes.
- Cook the rice: Rinse your rice under cold water until the water runs clear. In a medium pot, bring 4 cups of chicken broth to a boil. Add your rinsed rice, cover, and simmer for 15-20 minutes.
- Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes.
- Cook the chicken: Remove the chicken from the marinade and add it to the skillet. Cook for about 6-7 minutes on each side.
- Add pineapple: Pour in your pineapple chunks along with the reserved marinade. Stir and simmer for 5 minutes.
- Combine and serve: Gently fold the cooked rice into the chicken and pineapple mixture. Garnish with green onions if desired.
Notes
For a spicier version, add sriracha or red pepper flakes. Vegetarian option available by swapping chicken for tofu.
