Description
A light and creamy raspberry mousse that’s easy to make and perfect for any occasion.
Ingredients

- 2 cups Fresh Raspberries
- 1/4 cup Granulated Sugar
- 1 cup Heavy Cream
- 1 tablespoon Gelatin
- 1 teaspoon Vanilla Extract
- Pinch of Salt
Instructions
- Prepare the Gelatin by sprinkling it over 2 tablespoons of cold water in a small bowl and letting it sit for 5–10 minutes.
- Make the Raspberry Purée by blending fresh raspberries with sugar until smooth and straining it through a fine mesh sieve.
- Heat the Gelatin in the microwave for 10-15 seconds until dissolved, then stir it into the raspberry purée.
- Whip the Heavy Cream until soft peaks form.
- Combine the raspberry purée with the whipped cream, folding gently until just combined.
- Chill the mousse in serving cups for at least 2 hours.
- Serve with whipped cream and fresh raspberries as garnish.
Notes
You can make this mousse a day ahead for best results.
