A delicious and easy Sweet Chili Chicken Foil Pack recipe perfect for outdoor cooking and camping.
Ingredients

- 1.5 lbs Boneless, Skinless Chicken Breasts
- 1/2 cup Sweet Chili Sauce
- 1 cup Bell Peppers, mixed colors
- 1 medium Red Onion, sliced
- 1 cup Broccoli, small florets
- 2 tablespoons Olive Oil
- Salt and Pepper, to taste
- Fresh cilantro or parsley, for garnish
Instructions
- Start by tearing off several sheets of heavy-duty aluminum foil, about 12 inches long.
- Take your chicken breasts and cut them into bite-sized pieces.
- Toss the chicken in a mixing bowl with the sweet chili sauce, salt, and pepper until nicely coated.
- On the center of each foil sheet, start layering your veggies.
- Before you seal your foil packs, sprinkle some olive oil over the top of your ingredients.
- Fold the sides of the foil over the ingredients, then crimp the ends closed.
- Place the foil packs on your grill (or over the campfire) for about 20-25 minutes.
- Carefully open the foil packs and garnish with fresh cilantro or parsley.
Notes
You can prep these packs ahead of time and store them in a cooler until ready to cook.
