- 2 medium-sized Potatoes
- 1 cup All-Purpose Flour
- 2 tablespoons Olive Oil
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 1 tablespoon Fresh Herbs (optional)
Instructions
- Prep the Potatoes: Start by peeling the potatoes and cutting them into small chunks.
- Boil the Potatoes: Place the potato chunks in a pot of salted water and bring to a boil. Cook until they are fork-tender, about 15-20 minutes.
- Drain and let them cool slightly.
- Mash the Potatoes: In a large mixing bowl, mash the potatoes until smooth.
- Mix Your Ingredients: Add the flour, olive oil, salt, pepper, and any chopped fresh herbs into the bowl with the mashed potatoes.
- Knead the Dough: Turn the dough out onto a lightly floured surface and knead gently for about 2-3 minutes.
- Divide the Dough: Once your dough is looking fabulous, divide it into 6-8 equal pieces.
- Roll Out the Flatbreads: On a lightly floured surface, take one of the dough balls and flatten it with your palm.
- Cook the Flatbreads: Heat a non-stick skillet over medium heat and cook for about 2-3 minutes per side.
- Keep Warm and Serve: Stack your cooked flatbreads on a plate and cover them with a towel.
