Ingredients

  • 1 cup All-Purpose Flour
  • 2 tablespoons Olive Oil
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 tablespoon Fresh Herbs (optional)

Instructions

  1. Prep the Potatoes: Start by peeling the potatoes and cutting them into small chunks.
  2. Boil the Potatoes: Place the potato chunks in a pot of salted water and bring to a boil. Cook until they are fork-tender, about 15-20 minutes.
  3. Drain and let them cool slightly.
  4. Mash the Potatoes: In a large mixing bowl, mash the potatoes until smooth.
  5. Mix Your Ingredients: Add the flour, olive oil, salt, pepper, and any chopped fresh herbs into the bowl with the mashed potatoes.
  6. Knead the Dough: Turn the dough out onto a lightly floured surface and knead gently for about 2-3 minutes.
  7. Divide the Dough: Once your dough is looking fabulous, divide it into 6-8 equal pieces.
  8. Roll Out the Flatbreads: On a lightly floured surface, take one of the dough balls and flatten it with your palm.
  9. Cook the Flatbreads: Heat a non-stick skillet over medium heat and cook for about 2-3 minutes per side.
  10. Keep Warm and Serve: Stack your cooked flatbreads on a plate and cover them with a towel.
