Ingredients

  • 1 cup Orzo Pasta
  • 2 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • 1 Zucchini, chopped
  • 2 Carrots, chopped
  • 1 cup Peas
  • 1 cup Spinach or Kale, chopped
  • 1/4 cup Parmesan Cheese, grated
  • Salt and Pepper to taste

Instructions

  1. Prep the ingredients by chopping zucchini and carrots into tiny pieces.
  2. Cook the orzo in boiling vegetable broth according to package instructions, about 8-10 minutes.
  3. Sauté the chopped zucchini and carrots in olive oil over medium heat for 3-5 minutes.
  4. Add the peas and spinach; sauté for another 2-3 minutes.
  5. Combine the cooked orzo with the veggies in the skillet and mix well.
  6. Sprinkle in the parmesan cheese and stir until melted and creamy.
  7. Final season with salt and pepper to taste.
