Description

A festive and colorful no-bake pie with creamy cheesecake filling and vibrant berry swirls, perfect for your 4th of July celebrations.


Ingredients

  • 1 ½ cups crushed graham crackers
  • ⅓ cup melted butter
  • ¼ cup sugar
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberry puree
  • 1 cup fresh blueberry puree
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the crust by mixing crushed graham crackers with melted butter and sugar.
  2. Press the mixture firmly into the bottom and up the sides of a pie dish.
  3. Bake the crust at 350°F for 8-10 minutes, or refrigerate if keeping it no-bake.
  4. Make the filling by beating cream cheese, powdered sugar, and vanilla until smooth.
  5. Whip the heavy cream until stiff peaks form and fold into the cream cheese mixture.
  6. Color the filling by dividing it into three bowls and mixing in strawberry and blueberry purees.
  7. Swirl the colored filling into the crust, alternating colors.
  8. Chill the pie in the fridge for at least 4 hours or overnight.
  9. Serve with fresh berries and enjoy!

Notes

If using frozen berries, ensure they’re thawed and drained before use.
