Instructions

  1. Prepare the Raspberries: Start by washing the fresh raspberries gently under cold water. Pat them dry with a paper towel. In a medium bowl, mash half of the berries with a fork—this will release their juices and flavor into the fluff. Set the other half aside for garnish later.
  2. Mix the Cream Cheese: In a large mixing bowl, add your softened cream cheese. Using an electric mixer, beat it until it’s smooth and creamy.
  3. Add Sweetness and Flavor: Sprinkle in the powdered sugar, then pour in the lemon juice and zest. Beat this mixture until it’s all well combined.
  4. Whip the Cream: In a separate bowl, pour in the heavy whipping cream and add the vanilla extract. Using clean beaters, whip until stiff peaks form.
  5. Combine the Mixtures: Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the air you just whipped into it.
  6. Add the Raspberries: Once combined, lovingly fold in the mashed raspberries, making sure to keep some whole for that beautiful, colorful presentation!
  7. Chill the Fluff: Transfer the mixture into a serving bowl or individual cups. Cover with plastic wrap and refrigerate for at least 2 hours.

Notes
