Ingredients

  • Fresh Raspberries (2 cups)
  • Granulated Sugar (1 cup)
  • Brown Sugar (1/2 cup)
  • All-Purpose Flour (2 cups)
  • Unsalted Butter (1 cup or 2 sticks, softened)
  • Rolled Oats (1 cup)
  • Baking Powder (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Vanilla Extract (1 teaspoon)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×9-inch baking dish and line it with parchment paper.
  3. Make the crust mixture by combining flour, oats, granulated sugar, brown sugar, baking powder, and salt.
  4. Add softened butter to the mixture and mix until coarse crumbs form.
  5. Reserve about 1 ½ cups of the crumb mixture for topping.
  6. Press the remaining crumb mixture into the bottom of the prepared baking dish.
  7. Prepare the raspberry filling by tossing raspberries with a tablespoon of sugar and a splash of lemon juice.
  8. Spread the raspberry mixture over the crust.
  9. Top with the reserved crumb mixture.
  10. Bake in the preheated oven for 40-45 minutes.
