Ingredients
- Fresh Raspberries (2 cups)
- Granulated Sugar (1 cup)
- Brown Sugar (1/2 cup)
- All-Purpose Flour (2 cups)
- Unsalted Butter (1 cup or 2 sticks, softened)
- Rolled Oats (1 cup)
- Baking Powder (1 teaspoon)
- Salt (1/2 teaspoon)
- Vanilla Extract (1 teaspoon)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×9-inch baking dish and line it with parchment paper.
- Make the crust mixture by combining flour, oats, granulated sugar, brown sugar, baking powder, and salt.
- Add softened butter to the mixture and mix until coarse crumbs form.
- Reserve about 1 ½ cups of the crumb mixture for topping.
- Press the remaining crumb mixture into the bottom of the prepared baking dish.
- Prepare the raspberry filling by tossing raspberries with a tablespoon of sugar and a splash of lemon juice.
- Spread the raspberry mixture over the crust.
- Top with the reserved crumb mixture.
- Bake in the preheated oven for 40-45 minutes.
- Cool completely before slicing into squares.
