A light and airy raspberry mousse that’s perfect for parties and sure to impress your friends and family.
Ingredients

- 2 cups Fresh Raspberries
- 1/2 cup Granulated Sugar
- 1 cup Heavy Whipping Cream
- 1 teaspoon Vanilla Extract
- 1 teaspoon Gelatin
- 1 tablespoon Lemon Juice
Instructions
- Prepare the raspberries by rinsing gently, patting dry, and blending until smooth.
- Pour the raspberry puree into a bowl and add the granulated sugar, stirring until dissolved.
- In a small bowl, sprinkle gelatin over cold water and let it bloom for about 5 minutes.
- Heat the bloomed gelatin gently until dissolved, then cool slightly before adding to the raspberry mixture.
- Whip the heavy cream until soft peaks form and fold in the vanilla extract.
- Folding in 1/3 of the whipped cream into the raspberry mixture, then add the remaining cream in two batches.
- Transfer the mousse into serving cups and refrigerate for at least 2 hours to set.
Notes
For a gourmet touch, consider adding vanilla bean paste. Garnish with fresh raspberries and whipped cream before serving.
