Description

A light and airy raspberry mousse that’s perfect for parties and sure to impress your friends and family.


Ingredients

  • 2 cups Fresh Raspberries
  • 1/2 cup Granulated Sugar
  • 1 cup Heavy Whipping Cream
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Gelatin
  • 1 tablespoon Lemon Juice

Instructions

  1. Prepare the raspberries by rinsing gently, patting dry, and blending until smooth.
  2. Pour the raspberry puree into a bowl and add the granulated sugar, stirring until dissolved.
  3. In a small bowl, sprinkle gelatin over cold water and let it bloom for about 5 minutes.
  4. Heat the bloomed gelatin gently until dissolved, then cool slightly before adding to the raspberry mixture.
  5. Whip the heavy cream until soft peaks form and fold in the vanilla extract.
  6. Folding in 1/3 of the whipped cream into the raspberry mixture, then add the remaining cream in two batches.
  7. Transfer the mousse into serving cups and refrigerate for at least 2 hours to set.

Notes

For a gourmet touch, consider adding vanilla bean paste. Garnish with fresh raspberries and whipped cream before serving.
