Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk (or a dairy-free alternative)
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin.
  2. Mix the rolled oats, flour, brown sugar, granulated sugar, baking powder, baking soda, and salt in a large bowl.
  3. Blend the milk, vegetable oil, and eggs in another bowl until smooth.
  4. Combine the wet ingredients with the dry ingredients, folding gently.
  5. Add the chocolate chips and mix gently.
  6. Fill each muffin cup about 3/4 full with batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.
