- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk (or a dairy-free alternative)
- 1/2 cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin.
- Mix the rolled oats, flour, brown sugar, granulated sugar, baking powder, baking soda, and salt in a large bowl.
- Blend the milk, vegetable oil, and eggs in another bowl until smooth.
- Combine the wet ingredients with the dry ingredients, folding gently.
- Add the chocolate chips and mix gently.
- Fill each muffin cup about 3/4 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
