A cozy fall treat bursting with flavors of pumpkin and apples, perfect for breakfast or snacking.

- 1 cup pumpkin puree
- 1/2 cup unsweetened applesauce
- 1/2 cup vegetable oil
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/2 teaspoon salt
- 1–2 cups diced apples (about 2 medium apples)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with oil or non-stick cooking spray.
- Combine the pumpkin puree, applesauce, vegetable oil, brown sugar, and granulated sugar in a large mixing bowl. Whisk until smooth.
- Add the eggs and whisk until incorporated.
- Mix the all-purpose and whole wheat flour, baking soda, baking powder, cinnamon, allspice, and salt in a separate bowl.
- Pour the dry mixture into the wet ingredients and gently fold together using a spatula.
- Add the diced apples and gently fold them into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Cool the loaf in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
Serve warm with a pat of butter or cream cheese. Perfect with a cup of coffee or apple cider.
