- 3 large Eggs
- 1 cup Milk (dairy or non-dairy)
- 1 teaspoon Vanilla extract
- 4 cups Bread (cubed, day-old is preferable)
- 2 teaspoons Cinnamon
- 1/2 cup Sugar (plus extra for topping)
- 1 tablespoon Baking powder
- 1/4 teaspoon Salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the muffin pan with cooking spray or liners.
- Whisk the eggs, then add milk and vanilla extract in a bowl.
- Cube the bread and fold into the wet mixture, letting it soak for 10 minutes.
- Combine dry ingredients in another bowl: flour, sugar, baking powder, cinnamon, and salt.
- Add the dry mixture to the wet mixture and gently fold.
- Fill the muffin cups 3/4 full with batter.
- Prepare the topping by mixing sugar and cinnamon and sprinkle over muffins.
- Bake for 20-25 minutes or until golden brown.
- Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
For a fun twist, try adding chocolate chips, fruits, or nuts to the batter. Serve warm for the best taste.
