Deliciously fluffy muffins that combine all the flavors of French toast with a sweet cinnamon sugar topping, perfect for breakfast or brunch.


Ingredients

  • 1 cup Milk (dairy or non-dairy)
  • 1 teaspoon Vanilla extract
  • 4 cups Bread (cubed, day-old is preferable)
  • 2 teaspoons Cinnamon
  • 1/2 cup Sugar (plus extra for topping)
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the muffin pan with cooking spray or liners.
  3. Whisk the eggs, then add milk and vanilla extract in a bowl.
  4. Cube the bread and fold into the wet mixture, letting it soak for 10 minutes.
  5. Combine dry ingredients in another bowl: flour, sugar, baking powder, cinnamon, and salt.
  6. Add the dry mixture to the wet mixture and gently fold.
  7. Fill the muffin cups 3/4 full with batter.
  8. Prepare the topping by mixing sugar and cinnamon and sprinkle over muffins.
  9. Bake for 20-25 minutes or until golden brown.
  10. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes
