Description

Deliciously soft Coffee Cake Muffins topped with a crumbly streusel, perfect for mornings or brunch.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup streusel topping (1/2 cup flour, 1/2 cup brown sugar, 1/4 cup rolled oats, 1/2 teaspoon cinnamon, 1/4 cup cold butter)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin.
  2. Mix the dry ingredients: whisk the flour, baking soda, baking powder, salt, and cinnamon.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then add the vanilla.
  5. Mix in the sour cream until well combined.
  6. Combine the wet and dry ingredients gently until just mixed.
  7. Fill the muffin tin liners with batter and sprinkle streusel topping on top.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool the muffins for 5 minutes before transferring to a wire rack.

Notes

Add chopped nuts, chocolate chips, or dried fruits to customize your muffins! Best enjoyed warm with butter or icing.
