Deliciously soft Coffee Cake Muffins topped with a crumbly streusel, perfect for mornings or brunch.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup sour cream
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 1 cup streusel topping (1/2 cup flour, 1/2 cup brown sugar, 1/4 cup rolled oats, 1/2 teaspoon cinnamon, 1/4 cup cold butter)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin.
- Mix the dry ingredients: whisk the flour, baking soda, baking powder, salt, and cinnamon.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla.
- Mix in the sour cream until well combined.
- Combine the wet and dry ingredients gently until just mixed.
- Fill the muffin tin liners with batter and sprinkle streusel topping on top.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool the muffins for 5 minutes before transferring to a wire rack.
Notes
Add chopped nuts, chocolate chips, or dried fruits to customize your muffins! Best enjoyed warm with butter or icing.
