- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners or grease them lightly.
- Mix the wet ingredients: In a large bowl, combine pumpkin puree, vegetable oil, sugar, and eggs. Whisk until well blended.
- Combine the dry ingredients: In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Mix it all together: Gradually add the dry ingredients to the wet mixture, gently folding until just combined.
- Add the chocolate chips, folding gently to ensure even distribution.
- Fill each muffin cup approximately 2/3 full.
- Bake for about 18-22 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For added elegance, sprinkle powdered sugar on top or drizzle with maple syrup before serving.
