Description
Delight in these versatile gluten-free crepes that can be filled with sweet or savory ingredients, perfect for any occasion.
Ingredients
Scale
- 1 cup gluten-free all-purpose flour
- 2 large eggs
- 1 1/4 cups milk
- 1 tablespoon melted butter (plus extra for the pan)
- 1 tablespoon sugar (optional)
- 1 teaspoon vanilla extract (optional)
Instructions
- Whisk together the dry ingredients: In a mixing bowl, add the gluten-free flour and sugar (if using). Whisk them together until well combined.
- Mix your wet ingredients: In another bowl, beat the eggs, then add the milk and melted butter (and vanilla if using). Whisk everything until smooth.
- Combine dry and wet ingredients: Slowly pour your wet mixture into the dry mix while whisking to prevent lumps.
- Let it rest: Cover the bowl with plastic wrap and let the batter rest for at least 30 minutes.
- Heat the pan: Preheat a non-stick crepe pan or skillet over medium heat and lightly grease it with butter.
- Pour and spread the batter: Use a ladle to pour about 1/4 cup of batter into the center of the pan, and swirl it to spread out evenly.
- Cook the crepe: Cook for about 1-2 minutes until the edges start to lift and the bottom is golden. Flip and cook for an additional minute.
- Repeat: Repeat the process with the remaining batter, stacking the crepes on a plate.
Notes
Let the batter rest for the best texture and feel free to get creative with fillings!
