A delightful combination of tangy pineapple and smoky BBQ chicken perfect for outdoor cookouts.


Ingredients

  • 11.5 pounds Boneless, Skinless Chicken Breasts
  • 1 cup BBQ Sauce
  • 1 cup Pineapple Chunks
  • 12 Bell Peppers (assorted colors)
  • 1 small Red Onion
  • 1 cup Corn (fresh or frozen)
  • 1 tablespoon Olive Oil
  • Salt and Pepper (to taste)
  • Aluminum Foil (enough for wrapping)

Instructions

  1. Prepare the Chicken: Trim any excess fat off the chicken breasts.
  2. Marinate: Combine chicken with BBQ sauce and marinate for at least 30 minutes.
  3. Chop the Veggies: Chop bell peppers, red onion, and any other veggies.
  4. Prepare Your Foil: Tear off sheets of aluminum foil about 12-14 inches long.
  5. Assemble the Dinners: Place marinated chicken and toppings in the center of each foil sheet.
  6. Seal ‘Em Up: Fold the foil to create a sealed pouch.
  7. Cook: Place pouches on hot coals or grill/oven at 400°F (200°C) for 20-25 minutes.
  8. Check for Doneness: Ensure chicken is cooked through and veggies are tender.
  9. Serve: Slide everything out of the pouches onto plates; drizzle with additional BBQ sauce if desired.

Notes
