Ingredients

- 1–1.5 pounds Boneless, Skinless Chicken Breasts
- 1 cup BBQ Sauce
- 1 cup Pineapple Chunks
- 1–2 Bell Peppers (assorted colors)
- 1 small Red Onion
- 1 cup Corn (fresh or frozen)
- 1 tablespoon Olive Oil
- Salt and Pepper (to taste)
- Aluminum Foil (enough for wrapping)
Instructions
- Prepare the Chicken: Trim any excess fat off the chicken breasts.
- Marinate: Combine chicken with BBQ sauce and marinate for at least 30 minutes.
- Chop the Veggies: Chop bell peppers, red onion, and any other veggies.
- Prepare Your Foil: Tear off sheets of aluminum foil about 12-14 inches long.
- Assemble the Dinners: Place marinated chicken and toppings in the center of each foil sheet.
- Seal ‘Em Up: Fold the foil to create a sealed pouch.
- Cook: Place pouches on hot coals or grill/oven at 400°F (200°C) for 20-25 minutes.
- Check for Doneness: Ensure chicken is cooked through and veggies are tender.
- Serve: Slide everything out of the pouches onto plates; drizzle with additional BBQ sauce if desired.
Notes
Can prep in advance and store in the fridge for a day before cooking. Great for customization with various veggies or sauces.
