Ingredients

  • Chicken Breasts (2-4 pieces)
  • Baby Potatoes (1 lb)
  • Olive Oil (2-3 tablespoons)
  • Garlic Powder (1 teaspoon)
  • Paprika (1 teaspoon)
  • Italian Seasoning or Herbs de Provence (1 tablespoon)
  • Salt and Pepper (to taste)
  • Vegetables (optional): Bell peppers, zucchini, or asparagus

Instructions

  1. Preheat your oven or grill to 400°F (200°C).
  2. Prep the baby potatoes by rinsing and cutting them in halves or quarters.
  3. Season the chicken by combining olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper in a bowl.
  4. Add the chicken breasts to the bowl, turning to coat evenly.
  5. Assemble the packs by cutting heavy-duty aluminum foil into squares. Place potatoes in the center, then lay a chicken breast on top.
  6. Add any optional veggies around the chicken and potatoes, drizzle with olive oil, and season with salt and pepper.
  7. Seal the foil packs well to avoid leaks.
  8. Cook the packs in the oven for 25-30 minutes or on the grill for 20-25 minutes.
  9. Check for doneness by ensuring the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are fork-tender.
  10. Serve the packs directly on plates or let everyone dig into their own pack.

Notes

For optimal flavor, let chicken marinate in the seasoning for a few hours or overnight.
