Ingredients
- Chicken Breasts (2-4 pieces)
- Baby Potatoes (1 lb)
- Olive Oil (2-3 tablespoons)
- Garlic Powder (1 teaspoon)
- Paprika (1 teaspoon)
- Italian Seasoning or Herbs de Provence (1 tablespoon)
- Salt and Pepper (to taste)
- Vegetables (optional): Bell peppers, zucchini, or asparagus
Instructions
- Preheat your oven or grill to 400°F (200°C).
- Prep the baby potatoes by rinsing and cutting them in halves or quarters.
- Season the chicken by combining olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper in a bowl.
- Add the chicken breasts to the bowl, turning to coat evenly.
- Assemble the packs by cutting heavy-duty aluminum foil into squares. Place potatoes in the center, then lay a chicken breast on top.
- Add any optional veggies around the chicken and potatoes, drizzle with olive oil, and season with salt and pepper.
- Seal the foil packs well to avoid leaks.
- Cook the packs in the oven for 25-30 minutes or on the grill for 20-25 minutes.
- Check for doneness by ensuring the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are fork-tender.
- Serve the packs directly on plates or let everyone dig into their own pack.
Notes
For optimal flavor, let chicken marinate in the seasoning for a few hours or overnight.
