- 1 lb Chicken Breast or Thighs
- 3 tbsp Unsalted Butter
- 4 cloves Garlic, minced
- Fresh Herbs (Parsley, Chives, Thyme)
- 1 tsp Paprika
- 2 tbsp Lemon Juice
- 2 cups Rice or Quinoa
- Mixed Veggies (bell peppers, corn, zucchini)
- Salt and Pepper to taste
Instructions
- Prepare the chicken: Clean and cut into bite-sized pieces, pat dry for better searing.
- Season the chicken with paprika, salt, and pepper. Marinate for at least 15 minutes.
- Sauté the chicken in melted butter over medium-high heat for 5-7 minutes on each side.
- Add garlic and herbs when chicken is nearly cooked, stir until fragrant.
- Finish with lemon juice to brighten the flavors.
- Cook rice or quinoa according to package instructions.
- Prepare the mixed veggies in a separate pan until tender.
- Assemble in bowls starting with rice/quinoa and topping with chicken and veggies.
- Garnish with fresh herbs and serve warm.
