Description

A flavorful and comforting dish featuring buttery, herb-infused chicken served over a base of rice or quinoa, topped with mixed veggies.


Ingredients

  • 1 lb Chicken Breast or Thighs
  • 3 tbsp Unsalted Butter
  • 4 cloves Garlic, minced
  • Fresh Herbs (Parsley, Chives, Thyme)
  • 1 tsp Paprika
  • 2 tbsp Lemon Juice
  • 2 cups Rice or Quinoa
  • Mixed Veggies (bell peppers, corn, zucchini)
  • Salt and Pepper to taste

Instructions

  1. Prepare the chicken: Clean and cut into bite-sized pieces, pat dry for better searing.
  2. Season the chicken with paprika, salt, and pepper. Marinate for at least 15 minutes.
  3. Sauté the chicken in melted butter over medium-high heat for 5-7 minutes on each side.
  4. Add garlic and herbs when chicken is nearly cooked, stir until fragrant.
  5. Finish with lemon juice to brighten the flavors.
  6. Cook rice or quinoa according to package instructions.
  7. Prepare the mixed veggies in a separate pan until tender.
  8. Assemble in bowls starting with rice/quinoa and topping with chicken and veggies.
  9. Garnish with fresh herbs and serve warm.
