- 1/4 cup Honey
- 4 tablespoons Unsalted Butter
- 4 cloves Garlic, minced
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Prep the carrots by washing, peeling, and cutting them into 1-inch thick sticks or rounds.
- Make the honey garlic butter mixture by melting butter and garlic in a saucepan, then stirring in honey, salt, and pepper.
- Combine the carrots with the honey garlic butter mixture in a large bowl until thoroughly coated.
- Roast the carrots on a baking sheet lined with parchment paper for 20-25 minutes until caramelized and fork-tender, tossing halfway through.
- Finish by drizzling more honey and optionally garnishing with parsley before serving.
