Ingredients

  • 1/4 cup Honey
  • 4 tablespoons Unsalted Butter
  • 4 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prep the carrots by washing, peeling, and cutting them into 1-inch thick sticks or rounds.
  3. Make the honey garlic butter mixture by melting butter and garlic in a saucepan, then stirring in honey, salt, and pepper.
  4. Combine the carrots with the honey garlic butter mixture in a large bowl until thoroughly coated.
  5. Roast the carrots on a baking sheet lined with parchment paper for 20-25 minutes until caramelized and fork-tender, tossing halfway through.
  6. Finish by drizzling more honey and optionally garnishing with parsley before serving.
