Ingredients
- Colorful Carrots: 1 pound
- Honey: 2 tablespoons

- Fresh Thyme: 1 tablespoon, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the carrots by washing and peeling them.
- Mix the honey, olive oil, salt, black pepper, and chopped thyme in a bowl.
- Coat the carrots in the honey mixture.
- Arrange the carrots on a lined baking sheet in a single layer.
- Roast the carrots for 25–30 minutes, tossing halfway through.
- Check for doneness; they should be tender and golden brown.

Notes
You can prepare the carrots ahead of time and toss them in the honey mixture up to a day in advance. Regular orange carrots can be used if colorful ones are unavailable.
