Description

A nostalgic and comforting dish featuring juicy chicken thighs baked with flavorful long-grain rice and vegetables.


Ingredients

  • 46 Bone-In Chicken Thighs
  • 1 ½ cups Long-Grain White Rice
  • 3 cups Chicken Broth
  • 2 tablespoons Olive Oil
  • 1 medium Onion, diced
  • 4 cloves Garlic, minced
  • 1 Bell Pepper, diced
  • Salt and Pepper, to taste
  • 1 tablespoon Thyme (fresh or 1 teaspoon dried)
  • 1 teaspoon Paprika
  • 1 cup frozen Peas

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sear the chicken in a large oven-safe pot with olive oil until golden brown.
  3. Remove the chicken and sauté the onion and bell pepper in the same pot.
  4. Add minced garlic, thyme, and paprika, sautéing until fragrant.
  5. Stir in the rice and pour in the chicken broth, simmering lightly.
  6. Nestle the chicken back on top of the rice.
  7. Bake covered for 35-40 minutes until rice is tender and chicken is cooked through.
  8. Add frozen peas during the last 10 minutes of cooking.
  9. Remove from the oven and let it rest for 5-10 minutes before serving.

Notes

For added flavor, scrape up brown bits from the bottom of the pot and consider mixing in other herbs or even cheese during the last few minutes of baking.
