- 1.5 pounds Potatoes (russet or Yukon gold, diced)
- 6 ounces Pepperoni (chopped)
- 2 tablespoons Ranch seasoning mix
- 2 tablespoons Olive oil
- 1 medium Onion (diced)
- 1 medium Bell pepper (any color, diced)
- 1 cup Cheddar cheese (shredded)
- Fresh chives (for garnish)
Instructions
- Prep your potatoes: Peel and dice your potatoes into bite-sized pieces. If using baby potatoes, slice them in half.
- Boil the potatoes: In a large pot, add the potatoes, cover with water, and bring to a boil. Boil for about 5–7 minutes until slightly tender. Drain and set aside.
- Sauté the veggies: In a large skillet, heat olive oil over medium heat. Add diced onions and bell pepper, cooking until onions become translucent (about 3–4 minutes).
- Add the potatoes: Carefully add drained potatoes to the skillet, gently tossing to combine. Cook for 8–10 minutes until golden and crispy.
- Season it up: Sprinkle ranch seasoning over the potato mixture. Stir well to coat and mix in the chopped pepperoni.
- Cheesy goodness: Sprinkle shredded cheddar cheese over the skillet, cover, and lower heat. Cook for 5 minutes until cheese is melted and bubbly.
- Final touches: Remove from heat and garnish with fresh chives. Optionally, drizzle ranch dressing on top before serving.
