Ingredients

  • Sweet Potatoes (2 medium)
  • Bell Peppers (1 cup, diced)
  • Onion (1 medium, diced)
  • Garlic (2 cloves, minced)
  • Spinach or Kale (1 cup, chopped)
  • Eggs (2-4, according to preference)
  • Olive Oil (2 tablespoons)
  • Salt and Pepper (to taste)

Instructions

  1. Prep your ingredients by washing and peeling the sweet potatoes, then chop them into small cubes.
  2. Sauté the aromatics in a large skillet with olive oil over medium heat until onions are translucent (about 3-5 minutes).
  3. Add the sweet potatoes to the skillet, season with salt and pepper, and cover to let steam for about 5-7 minutes.
  4. Toss in the garlic and your chopped greens, cooking for an additional 2-3 minutes until the greens wilt.
  5. Create wells in the hash and crack the eggs into them; cover again until eggs are cooked to your liking (3-5 minutes).
  6. Serve hot with a sprinkle of fresh herbs or avocado on top.
