A flavorful and easy-to-make Teriyaki Chicken Dinner cooked in foil packets for maximum moisture and taste.

- 1 lb Chicken thighs (boneless, skinless)
- 1/2 cup Teriyaki sauce
- 1 cup Bell peppers (sliced)
- 1 cup Broccoli florets
- 1 cup Carrots (sliced thinly)
- 2 Green onions (chopped)
- 1 tbsp Sesame seeds
- 1 tbsp Olive oil
Instructions
- Preheat your grill to medium-high heat or preheat your oven to 400°F (200°C).
- Tear off sheets of aluminum foil about 12 inches long, doubling them up for a secure seal.
- Place chicken thighs in a bowl and drizzle teriyaki sauce over them, marinating for at least 15 minutes.
- Layer broccoli, bell peppers, and carrots on the foil, drizzle with olive oil, and season with salt and pepper.
- Set the marinated chicken on top of the veggies and drizzle with leftover teriyaki sauce.
- Wrap the foil tightly around the chicken and veggies to create a secure packet.
- Cook on the grill for 20-25 minutes or in the oven for 25-30 minutes until chicken reaches 165°F internal temperature.
- Unwrap the packets carefully, sprinkle with sesame seeds and green onions before serving.
Notes
Try adding fresh pineapple chunks or swapping chicken for firm tofu for a vegetarian twist.
