Ingredients

  • 1 lb Fresh Salmon, cut into bite-sized pieces
  • 2 medium Leeks, chopped
  • 2 large Potatoes, diced
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Heavy Cream
  • 1/4 cup Fresh Dill, chopped
  • 3 cloves Garlic, minced
  • Salt & Pepper, to taste
  • 1 tablespoon Olive Oil

Instructions

  1. Prep your ingredients: Chop the leeks, dice the potatoes, mince the garlic, and cut the salmon.
  2. Sauté the leeks and garlic in olive oil in a large soup pot over medium heat for about 5-7 minutes until softened.
  3. Add the diced potatoes and chicken or vegetable broth. Bring to a boil, then reduce to a simmer for 10-12 minutes until potatoes are fork-tender.
  4. Introduce the salmon pieces gently and simmer for another 5-7 minutes until cooked through.
  5. Stir in the heavy cream and chopped dill, seasoning with salt and pepper. Simmer for an additional 3-5 minutes.
  6. Taste and adjust seasoning as needed.
  7. Serve in bowls, garnished with extra dill or a drizzle of olive oil.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut milk. Adjust seasoning according to taste.
