- 1 lb Fresh Salmon, cut into bite-sized pieces
- 2 medium Leeks, chopped
- 2 large Potatoes, diced
- 4 cups Chicken or Vegetable Broth
- 1 cup Heavy Cream
- 1/4 cup Fresh Dill, chopped
- 3 cloves Garlic, minced
- Salt & Pepper, to taste
- 1 tablespoon Olive Oil
Instructions
- Prep your ingredients: Chop the leeks, dice the potatoes, mince the garlic, and cut the salmon.
- Sauté the leeks and garlic in olive oil in a large soup pot over medium heat for about 5-7 minutes until softened.
- Add the diced potatoes and chicken or vegetable broth. Bring to a boil, then reduce to a simmer for 10-12 minutes until potatoes are fork-tender.
- Introduce the salmon pieces gently and simmer for another 5-7 minutes until cooked through.
- Stir in the heavy cream and chopped dill, seasoning with salt and pepper. Simmer for an additional 3-5 minutes.
- Taste and adjust seasoning as needed.
- Serve in bowls, garnished with extra dill or a drizzle of olive oil.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut milk. Adjust seasoning according to taste.
