Ingredients

  • 1 lb Chicken Breast or Thighs
  • 2 tbsp Olive Oil
  • 4 cloves Garlic, minced
  • 1 Onion, chopped
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 4 cups Chicken Broth
  • 1 can (14.5 oz) Diced Tomatoes
  • 2 cups Spinach
  • 1 cup Heavy Cream (or Coconut Milk)
  • 1/2 cup Parmesan Cheese, grated
  • Spices (Italian Herbs, Salt, and Pepper to taste)
  • 1 tbsp Lemon Juice

Instructions

  1. Prepare the Chicken: Season with salt and pepper, and sear in a pot with olive oil for 5-7 minutes on each side.
  2. Sauté the Veggies: Add onion, carrots, and celery to the pot; sauté for 5-6 minutes until softened.
  3. Add Garlic and Tomatoes: Stir in minced garlic and diced tomatoes; cook for another 3-4 minutes.
  4. Pour in the Broth: Return chicken to the pot with chicken broth; simmer covered for 20-30 minutes.
  5. Finishing Touches: Shred chicken, stir in cream and spinach; let wilt.
  6. Final Seasoning: Adjust with more salt, pepper, and lemon juice as needed.

Notes

Great served with crusty bread or garlic bread. Can be made ahead and reheated beautifully.
