- 1 lb Chicken Breast or Thighs
- 2 tbsp Olive Oil
- 4 cloves Garlic, minced
- 1 Onion, chopped
- 2 Carrots, diced
- 2 Celery stalks, diced
- 4 cups Chicken Broth
- 1 can (14.5 oz) Diced Tomatoes
- 2 cups Spinach
- 1 cup Heavy Cream (or Coconut Milk)
- 1/2 cup Parmesan Cheese, grated
- Spices (Italian Herbs, Salt, and Pepper to taste)
- 1 tbsp Lemon Juice
Instructions
- Prepare the Chicken: Season with salt and pepper, and sear in a pot with olive oil for 5-7 minutes on each side.
- Sauté the Veggies: Add onion, carrots, and celery to the pot; sauté for 5-6 minutes until softened.
- Add Garlic and Tomatoes: Stir in minced garlic and diced tomatoes; cook for another 3-4 minutes.
- Pour in the Broth: Return chicken to the pot with chicken broth; simmer covered for 20-30 minutes.
- Finishing Touches: Shred chicken, stir in cream and spinach; let wilt.
- Final Seasoning: Adjust with more salt, pepper, and lemon juice as needed.
Notes
