Ingredients

- 1 pound Dried Black Beans, rinsed
- 1 medium Onion, chopped
- 4 cloves Garlic, minced
- 1 Bell Pepper, chopped
- 2 teaspoons Cumin
- 1 teaspoon Chili Powder
- 2 Bay Leaves
- 4 cups Vegetable Broth
- Salt, to taste
Instructions
- Prep and rinse your black beans under cold water, sorting through them for any bad beans or debris.
- Sauté the chopped onion and bell pepper in the Instant Pot on ‘Sauté’ mode for 3–4 minutes until the onion is translucent.
- Add the minced garlic, cumin, and chili powder, sautéing for 1 minute until fragrant.
- Dump in the rinsed black beans and vegetable broth, adding bay leaves and a pinch of salt.
- Seal the lid, set the valve to ‘Sealing’, and cook on ‘Manual’ for 30 minutes.
- Release the pressure naturally for 20 minutes, then switch to ‘Venting’ to release remaining steam.
- Season to taste, removing bay leaves and adding extra salt or lime juice if desired.
