Whip up comforting Easy Instant Pot Black Beans, perfect for burritos and salads, in just a flash!


Ingredients

  • 1 pound Dried Black Beans, rinsed
  • 1 medium Onion, chopped
  • 4 cloves Garlic, minced
  • 1 Bell Pepper, chopped
  • 2 teaspoons Cumin
  • 1 teaspoon Chili Powder
  • 2 Bay Leaves
  • 4 cups Vegetable Broth
  • Salt, to taste

Instructions

  1. Prep and rinse your black beans under cold water, sorting through them for any bad beans or debris.
  2. Sauté the chopped onion and bell pepper in the Instant Pot on ‘Sauté’ mode for 3–4 minutes until the onion is translucent.
  3. Add the minced garlic, cumin, and chili powder, sautéing for 1 minute until fragrant.
  4. Dump in the rinsed black beans and vegetable broth, adding bay leaves and a pinch of salt.
  5. Seal the lid, set the valve to ‘Sealing’, and cook on ‘Manual’ for 30 minutes.
  6. Release the pressure naturally for 20 minutes, then switch to ‘Venting’ to release remaining steam.
  7. Season to taste, removing bay leaves and adding extra salt or lime juice if desired.
