Ingredients

  • 1 lb Boneless, Skinless Chicken Thighs
  • 2 tablespoons Olive Oil
  • 1 cup Long-Grain Rice (like Basmati)
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Bell Peppers, chopped
  • 2 cups Chicken Broth
  • 2 tablespoons Mediterranean Spice Blend
  • 1/2 cup Kalamata Olives, pitted
  • 1/2 cup Feta Cheese, crumbled
  • 1/4 cup Fresh Parsley, chopped

Instructions

  1. Prep your ingredients by chopping the onion, garlic, and bell peppers, and halving the cherry tomatoes.
  2. Sauté the chicken in a large pot or Dutch oven with olive oil for about 5 minutes on each side until golden brown, then remove.
  3. Sauté the onion and garlic in the same pot until translucent, about 3-4 minutes, then add the bell peppers.
  4. Add the rice, followed by the chicken broth, cherry tomatoes, and Mediterranean spice blend. Bring to a gentle simmer.
  5. Return the chicken thighs to the pot, cover, and reduce heat. Cook for 20 minutes until rice is tender.
  6. Finish by letting the pot sit off the heat for 5 minutes, then garnish with olives, feta, and parsley.

Notes

For a vegetarian version, substitute chicken with chickpeas or tofu, and use vegetable broth.
