- 1 lb Boneless, Skinless Chicken Thighs
- 2 tablespoons Olive Oil
- 1 cup Long-Grain Rice (like Basmati)
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 1 cup Cherry Tomatoes, halved
- 1 cup Bell Peppers, chopped
- 2 cups Chicken Broth
- 2 tablespoons Mediterranean Spice Blend
- 1/2 cup Kalamata Olives, pitted
- 1/2 cup Feta Cheese, crumbled
- 1/4 cup Fresh Parsley, chopped
Instructions
- Prep your ingredients by chopping the onion, garlic, and bell peppers, and halving the cherry tomatoes.
- Sauté the chicken in a large pot or Dutch oven with olive oil for about 5 minutes on each side until golden brown, then remove.
- Sauté the onion and garlic in the same pot until translucent, about 3-4 minutes, then add the bell peppers.
- Add the rice, followed by the chicken broth, cherry tomatoes, and Mediterranean spice blend. Bring to a gentle simmer.
- Return the chicken thighs to the pot, cover, and reduce heat. Cook for 20 minutes until rice is tender.
- Finish by letting the pot sit off the heat for 5 minutes, then garnish with olives, feta, and parsley.
Notes
For a vegetarian version, substitute chicken with chickpeas or tofu, and use vegetable broth.
