Description

Delightful mini ice cream sandwiches that are perfect for summer celebrations with a festive red, white, and blue twist.


Ingredients

  • 1 cup of softened butter
  • 1 cup of sugar
  • 2 large eggs
  • 2 teaspoons of vanilla extract
  • 3 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1 quart of vanilla ice cream
  • Red and blue sprinkles
  • Mini chocolate chips (optional)
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, followed by vanilla extract.
  4. Whisk together flour, baking powder, and salt in another bowl.
  5. Gradually add dry ingredients to wet ingredients, mixing until combined.
  6. Scoop out small portions of dough and roll into balls; place on a lined baking sheet.
  7. Bake for 8–10 minutes until edges are lightly golden.
  8. Cool on baking sheet for a few minutes then transfer to wire rack.
  9. Scoop out ice cream and let it soften before mixing in food coloring if desired.
  10. Assemble sandwiches by placing one cookie, adding ice cream, and pressing another cookie on top; roll in sprinkles.
  11. Freeze assembled sandwiches for about 1 hour.
  12. Serve immediately or store in an airtight container.
