A decadent yet healthy chocolate mousse enriched with protein and flavors of almond and coconut.
Ingredients

- 1 cup Silken Tofu
- 1/4 cup Almond Butter
- 1/4 cup Cocoa Powder
- 1/4 cup Maple Syrup
- 1 teaspoon Vanilla Extract
- 1/4 cup Shredded Coconut
- 1/2 cup Crunchy Almonds, chopped
- Non-Dairy Whipped Cream (optional, for topping)
Instructions
- Blend the silken tofu, almond butter, cocoa powder, maple syrup, and vanilla extract in a high-speed blender until silky and smooth.
- Taste the mousse and adjust sweetness with more maple syrup if desired.
- Fold in half of the shredded coconut and chopped almonds into the mixture.
- Chill the mousse in serving cups, covered, in the fridge for at least an hour.
- Whip the coconut cream for the topping if you choose to use it.
- Serve the mousse topped with whipped cream, additional coconut, and almonds.
- Dig in and enjoy!
