Description

A decadent yet healthy chocolate mousse enriched with protein and flavors of almond and coconut.


Ingredients

Scale
  • 1 cup Silken Tofu
  • 1/4 cup Almond Butter
  • 1/4 cup Cocoa Powder
  • 1/4 cup Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Shredded Coconut
  • 1/2 cup Crunchy Almonds, chopped
  • Non-Dairy Whipped Cream (optional, for topping)

Instructions

  1. Blend the silken tofu, almond butter, cocoa powder, maple syrup, and vanilla extract in a high-speed blender until silky and smooth.
  2. Taste the mousse and adjust sweetness with more maple syrup if desired.
  3. Fold in half of the shredded coconut and chopped almonds into the mixture.
  4. Chill the mousse in serving cups, covered, in the fridge for at least an hour.
  5. Whip the coconut cream for the topping if you choose to use it.
  6. Serve the mousse topped with whipped cream, additional coconut, and almonds.
  7. Dig in and enjoy!

Notes

This mousse is vegan, gluten-free, and can be customized with different nut butters or flavorings.
