- 1 cup Greek yogurt (plain)

- 1 packet unflavored gelatin (or 1 tablespoon agar-agar for a vegetarian option)
- Pinch of salt
Instructions
- Prep the apples: Start by peeling, coring, and chopping your apples into small pieces.
- Cook the apples: In a medium saucepan over medium heat, combine the chopped apples, lemon juice, and a splash of water. Cook for about 10 minutes.
- Blend it up: Once the apples have cooled slightly, toss them into a blender with Greek yogurt, honey, tarragon, and vanilla extract. Blend until smooth.
- Prepare the gelatin: In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.
- Combine everything: Heat the gelatin mixture gently and stir it into the apple mixture until well combined.
- Chill: Pour the mousse into serving cups or ramekins and chill in the fridge for at least 2 hours, or until set.
Notes
For a vegan version, substitute Greek yogurt with coconut yogurt and use agar-agar instead of gelatin. Add creativity to garnishes with whipped cream or a sprinkle of nuts.
