- 16 oz Cream Cheese
- 1 cup Greek Yogurt
- 1/2 cup Vanilla Protein Powder
- 1/4 cup Fresh Basil, chopped
- 2 cups Strawberries, pureed and chopped
- 1/4 cup Honey or Maple Syrup
- Graham Cracker Crust (store-bought or homemade)
- 1 tbsp Lemon Juice
- a pinch of Salt
Instructions
- Prepare the Crust: If you’re making a homemade graham cracker crust, crush about 9-10 crackers and mix with 5 tablespoons of melted butter until it resembles wet sand. Press this mixture into the bottom of a springform pan. Pop it in the fridge while you prepare the filling.
- Blend the Cheesecake Filling: In a large bowl, combine the cream cheese and Greek yogurt. Beat them together until smooth.
- Add the Protein Powder and Sweeteners: Gradually mix in the vanilla protein powder and honey (or maple syrup), adjusting sweetness as needed.
- Fold in Fresh Basil and Strawberries: Gently fold in the chopped basil and 1 cup of pureed strawberries, reserving some chopped strawberries for garnish.
- Smooth & Chill: Pour the cheesecake mixture over the crust and smooth out the top. Cover it and let it set in the fridge for at least 240 minutes.
- Serve with a Strawberry-Basil Sauce: Blend the reserved strawberries with lemon juice and honey, drizzling over slices before serving.
Notes
This cheesecake is delicious with variations such as using different berries or adding nut crusts. Serve with whipped cream or ice cream for extra indulgence.
