Description

Deliciously nutritious dessert cups filled with sweet blackberries and a crumbly topping packed with protein.


Ingredients

  • 2 cups fresh blackberries (or frozen, thawed)
  • 1/2 cup protein powder (vanilla or plant-based)
  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup coconut oil (melted)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon cinnamon
  • a pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toss blackberries with honey or maple syrup and cinnamon in a bowl.
  3. Set the berry mixture aside to meld flavors.
  4. Combine almond flour, rolled oats, protein powder, and salt in a separate bowl.
  5. Add melted coconut oil and honey/maple syrup to the dry ingredients; mix until crumbly.
  6. Fill muffin tins with berry mixture, then top with the cobbler mixture.
  7. Bake for 20-25 minutes until golden brown.
  8. Cool in the pan for 5-10 minutes, then remove.

Notes

Serve with Greek yogurt, whipped cream, or a drizzle of honey for added flavor.
