- 4 large Egg Whites
- 1 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 1 tsp Cornstarch
- 1 tsp White Vinegar
- 1 cup plain Greek Yogurt
- 1 ½ cups Raspberries
- 1 tsp Rose Water
- Powdered Sugar (for dusting)
Instructions
- Preheat your oven to 275°F (135°C). Line a baking sheet with parchment paper and draw four circles on the paper.
- Whip the egg whites in a clean bowl until soft peaks form, about 2-3 minutes.
- Add the granulated sugar gradually while continuing to beat until stiff peaks form, about 4-5 minutes.
- Fold in the vanilla extract, cornstarch, and vinegar gently.
- Pipe the meringue onto the drawn circles, creating a well in the center.
- Bake for 1 hour, then turn off the oven and leave the meringues inside for another hour to cool.
- Combine Greek yogurt, powdered sugar, and rose water in a bowl and whip until smooth for the cream filling.
- Fill cooled meringues with the protein cream and top with fresh raspberries.
- Serve immediately or store in the refrigerator if necessary.
Notes
For a lower-calorie option, consider substituting half the sugar with monk fruit sweetener.
