Description

Delightful and elegant dessert cups made with light meringue, packed with protein and infused with raspberry and rose flavors.


Ingredients

  • 4 large Egg Whites
  • 1 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp Cornstarch
  • 1 tsp White Vinegar
  • 1 cup plain Greek Yogurt
  • 1 ½ cups Raspberries
  • 1 tsp Rose Water
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 275°F (135°C). Line a baking sheet with parchment paper and draw four circles on the paper.
  2. Whip the egg whites in a clean bowl until soft peaks form, about 2-3 minutes.
  3. Add the granulated sugar gradually while continuing to beat until stiff peaks form, about 4-5 minutes.
  4. Fold in the vanilla extract, cornstarch, and vinegar gently.
  5. Pipe the meringue onto the drawn circles, creating a well in the center.
  6. Bake for 1 hour, then turn off the oven and leave the meringues inside for another hour to cool.
  7. Combine Greek yogurt, powdered sugar, and rose water in a bowl and whip until smooth for the cream filling.
  8. Fill cooled meringues with the protein cream and top with fresh raspberries.
  9. Serve immediately or store in the refrigerator if necessary.

Notes

For a lower-calorie option, consider substituting half the sugar with monk fruit sweetener.
