Ingredients

  • 1 cup almond flour
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey or maple syrup
  • 16 oz cream cheese, room temperature
  • 1 cup Greek yogurt
  • 1 cup vanilla protein powder
  • 1/3 cup honey or maple syrup
  • 2 teaspoons pure vanilla extract
  • 3 eggs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine almond flour, melted butter, and honey or maple syrup in a mixing bowl.
  3. Press the crust mixture into the bottom of a 9-inch springform pan and bake for 10–12 minutes.
  4. Beat cream cheese until smooth in a large mixing bowl.
  5. Add Greek yogurt and protein powder, mixing until combined.
  6. Incorporate honey or maple syrup, vanilla extract, and eggs, mixing on low speed.
  7. Pour the filling over the cooled crust and smooth with a spatula.
  8. Bake for 50–60 minutes until edges are set and center has a slight jiggle.
  9. Cool in the oven for 1 hour, then chill in the refrigerator for at least 4 hours.

Notes

Serve with whipped cream, fresh berries, or a nut garnish for added flavor.
