- 12 oz white chocolate
- 1 cup heavy cream
- 1/2 cup Greek yogurt
- 1/4 cup yuzu juice
- 1/4 cup powdered sugar
- 1 tablespoon gelatin
- 1/4 cup water
Instructions
- Melt the white chocolate in a heat-proof bowl set over a saucepan with simmering water.
- Bloom the gelatin by sprinkling it over the water in a small bowl and letting it sit for about 5 minutes.
- Combine the yuzu juice and powdered sugar in another bowl, then mix in the bloomed gelatin.
- Whip the heavy cream in a large bowl until soft peaks form.
- Fold the melted white chocolate into the whipped cream carefully.
- Add the yuzu-gelatin mixture and Greek yogurt, folding gently until combined.
- Chill the mousse in prepared serving dishes for at least 4 hours or until set.
- Serve with optional whipped cream, zest, or berries on top.
Notes
For a vegan version, substitute heavy cream with coconut cream and gelatin with agar-agar.
