- 2 medium Pears, diced

- 1 ½ cups crushed Graham Cracker Crust
- ½ cup melted Butter
- ¼ cup Sugar for crust
Instructions
- Preheat your oven to 325°F (160°C).
- Make the crust by mixing crushed graham cracker crumbs, melted butter, and sugar; press into a 9-inch springform pan.
- Prepare the filling by beating the cream cheese until smooth, then add Greek yogurt, sweetener, and vanilla extract.
- Add the eggs one by one, beating well after each addition.
- Fold in the diced pears and thyme gently.
- Pour the filling over the crust and smooth the top.
- Bake in the preheated oven for 45-50 minutes until edges are set and center is wobbly.
- Cool gradually in the oven for an hour, then chill in the fridge for at least 4 hours or overnight.

For a vegan option, substitute cream cheese with dairy-free options and use flax eggs. Slice and serve with whipped cream or a scoop of ice cream for added indulgence.
