Description

A creamy and dreamy dessert combining the subtle sweetness of taro with the richness of coconut, packed with protein.


Ingredients

  • 1 cup Taro, mashed
  • 2 cans Coconut milk
  • 1 scoop Protein powder (preferably vanilla)
  • 1/4 cup Maple syrup
  • 1 tsp Vanilla extract
  • 1/4 cup Cornstarch
  • A pinch of salt

Instructions

  1. Prepare the Taro: Start by peeling and cutting the taro into chunks. Boil them in water for about 15-20 minutes until they’re fork-tender. Once cooked, drain and let them cool.
  2. Combine Ingredients: In a medium saucepan, whisk together the coconut milk, protein powder, maple syrup, vanilla extract, and salt. Bring to a simmer over medium heat, stirring frequently.
  3. Thickening Magic: Mix the cornstarch with 2 tablespoons of water to create a slurry. Gradually whisk it into the simmering coconut mixture until it thickens.
  4. Add the Taro: Fold in the mashed taro and stir gently. Cook for an additional 2-3 minutes until heated through.
  5. Pour and Set: Remove from heat and pour into individual serving bowls. Allow to cool for 15 minutes then refrigerate for at least 2 hours to set.
  6. Serve it Up: Once set, top with fresh fruits, toasted coconut flakes, or crushed nuts for added texture. Drizzle with extra maple syrup if desired.

Notes

For a lighter option, blend coconut milk with almond milk. Can be made ahead of time; tastes better the next day.
