Ingredients

  • Crust:
  • 1.5 cups Almond Flour
  • 1/3 cup Coconut Oil, melted
  • 1/4 cup Maple Syrup
  • Filling:
  • 16 oz Cream Cheese, softened
  • 1 cup Pumpkin Puree
  • 1/2 cup Protein Powder
  • 3 Eggs
  • 2 teaspoons Chai Spice Blend
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine almond flour, melted coconut oil, and maple syrup in a mixing bowl until crumbly.
  3. Press this mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust in the preheated oven for about 10 minutes until golden.
  5. Beat the softened cream cheese in a large mixing bowl until smooth.
  6. Add in the pumpkin puree, protein powder, eggs, chai spice blend, and vanilla extract. Beat until smooth.
  7. Pour the filling over the crust and smooth it with a spatula.
  8. Bake in the oven for 40 minutes, until edges are set.
  9. Turn off the oven and cool the cheesecake inside for one hour.
  10. Remove from oven and cool at room temperature for another hour.
  11. Refrigerate for at least 4 hours or overnight.
  12. Serve by removing the sides of the springform pan and slicing with a hot knife.
