Description

A delightful and colorful breakfast bento box filled with scrambled eggs, fresh fruits, and other nutritious goodies.


Ingredients

  • 23 large Eggs
  • 2 Whole Wheat Tortillas
  • 1 Avocado
  • 1 cup Cherry Tomatoes
  • 1 cup Fresh Spinach
  • 12 cups assorted Fruits
  • 1 cup Greek Yogurt

Instructions

  1. Scramble the eggs in a bowl and season.
  2. Heat a non-stick skillet and add oil or butter.
  3. Pour the eggs into the skillet and cook gently until fluffy.
  4. Warm the tortillas in another skillet for 20-30 seconds each side.
  5. Layer scrambled eggs, avocado, and spinach in a tortilla, then roll tightly.
  6. Rinse and halve the cherry tomatoes and prepare other fruits.
  7. Fill the bento box with wraps, cherry tomatoes, and fruits.
  8. Add a cup of Greek yogurt as a dip.

Notes

You can substitute eggs with tofu for a vegan option and customize fruits based on seasons.
