Instructions
- Preheat your oven to 375°F (190°C) and prepare your muffin tin by greasing or lining it.
- Combine dry ingredients: whisk flour, baking powder, and salt in a large bowl.
- Mix wet ingredients: beat egg, then add milk and olive oil, stirring until combined.
- Combine wet and dry ingredients: fold the wet mixture into the dry without overmixing.
- Add the pizza sauce: fold in the sauce until evenly dispersed.
- Add in the goodies: toss in mozzarella, pepperoni, and any other toppings you love.
- Fill the muffin tin: divide batter among muffin cups, filling each about ¾ full.
- Top with more cheese: sprinkle reserved mozzarella on top of each muffin.
