Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin by greasing or lining it.
  2. Combine dry ingredients: whisk flour, baking powder, and salt in a large bowl.
  3. Mix wet ingredients: beat egg, then add milk and olive oil, stirring until combined.
  4. Combine wet and dry ingredients: fold the wet mixture into the dry without overmixing.
  5. Add the pizza sauce: fold in the sauce until evenly dispersed.
  6. Add in the goodies: toss in mozzarella, pepperoni, and any other toppings you love.
  7. Fill the muffin tin: divide batter among muffin cups, filling each about ¾ full.
