Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup coconut oil (melted)
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 cup fresh or frozen raspberries
  • Optional: 1/2 cup dark chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients: In a large bowl, combine the rolled oats, whole wheat flour, baking soda, salt, and cinnamon.
  3. Combine wet ingredients: In another bowl, mix the melted coconut oil, honey (or maple syrup), and the egg.
  4. Merge wet and dry: Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Fold in raspberries gently to keep them whole.
  6. Scoop dough onto a lined baking sheet, leaving space between each cookie.
  7. Bake for 10-12 minutes until edges are golden brown.
  8. Cool on a wire rack before enjoying.
