Ingredients

- 2 large Cucumbers, sliced
- 1 small Red Onion, thinly sliced
- 1 cup Cherry Tomatoes, halved
- 1 cup Feta Cheese, crumbled
- 2 tablespoons Fresh Dill, chopped
- 3 tablespoons Olive Oil
- 2 tablespoons Red Wine Vinegar
- Salt and Pepper, to taste
Instructions
- Prep your ingredients by washing cucumbers and tomatoes.
- Slice the cucumbers into thin rounds or half-moons.
- Prepare the onions by slicing them into thin rings.
- Halve the cherry tomatoes.
- Combine sliced cucumbers, onion, halved tomatoes, and chopped dill in a large bowl.
- Make the dressing by whisking together olive oil, red wine vinegar, salt, and pepper in a small bowl.
- Dress the salad with the dressing and toss gently to coat.
- Add crumbled feta on top and toss again.
- Chill in the fridge for 15-30 minutes before serving.
Notes
This salad can be made ahead of time and stored in the fridge for up to two days. Drain excess water if needed before serving.
