Description

A vibrant and refreshing Cucumber Salad that’s perfect for summer picnics or as a side dish to grilled meats.


Ingredients

  • 2 large Cucumbers, sliced
  • 1 small Red Onion, thinly sliced
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Feta Cheese, crumbled
  • 2 tablespoons Fresh Dill, chopped
  • 3 tablespoons Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • Salt and Pepper, to taste

Instructions

  1. Prep your ingredients by washing cucumbers and tomatoes.
  2. Slice the cucumbers into thin rounds or half-moons.
  3. Prepare the onions by slicing them into thin rings.
  4. Halve the cherry tomatoes.
  5. Combine sliced cucumbers, onion, halved tomatoes, and chopped dill in a large bowl.
  6. Make the dressing by whisking together olive oil, red wine vinegar, salt, and pepper in a small bowl.
  7. Dress the salad with the dressing and toss gently to coat.
  8. Add crumbled feta on top and toss again.
  9. Chill in the fridge for 15-30 minutes before serving.

Notes

This salad can be made ahead of time and stored in the fridge for up to two days. Drain excess water if needed before serving.
