- 2 cups Rotisserie Chicken, shredded
- ½ cup Greek Yogurt
- 1 cup Celery, finely chopped
- ¼ cup Green Onion, chopped
- 1 cup Grapes, halved
- ⅓ cup Almonds, sliced
- Lettuce Leaves (for wrapping)
Instructions
- Shred the Chicken by removing the skin from the rotisserie chicken and shredding the meat into bite-sized pieces.
- Mix the Dressing by combining Greek yogurt, a pinch of salt, and a dash of pepper in a mixing bowl.
- Add the chopped celery and green onions to the bowl.
- Throw in the halved grapes and sliced almonds next.
- Fold the shredded chicken into the mixture until evenly coated.
- Wash and dry your lettuce leaves, then lay them out on a serving platter.
- Scoop a generous amount of chicken salad onto the center of each leaf and serve.
Notes
For added flavor, squeeze a bit of lemon juice into the chicken salad before serving. Keep wraps individually wrapped until serving to prevent sogginess.
