Delicious and refreshing Rotisserie Chicken Salad Lettuce Wraps, perfect for lunch, dinner, or a light snack!


Ingredients

  • 2 cups Rotisserie Chicken, shredded
  • ½ cup Greek Yogurt
  • 1 cup Celery, finely chopped
  • ¼ cup Green Onion, chopped
  • 1 cup Grapes, halved
  • ⅓ cup Almonds, sliced
  • Lettuce Leaves (for wrapping)

Instructions

  1. Shred the Chicken by removing the skin from the rotisserie chicken and shredding the meat into bite-sized pieces.
  2. Mix the Dressing by combining Greek yogurt, a pinch of salt, and a dash of pepper in a mixing bowl.
  3. Add the chopped celery and green onions to the bowl.
  4. Throw in the halved grapes and sliced almonds next.
  5. Fold the shredded chicken into the mixture until evenly coated.
  6. Wash and dry your lettuce leaves, then lay them out on a serving platter.
  7. Scoop a generous amount of chicken salad onto the center of each leaf and serve.

Notes

For added flavor, squeeze a bit of lemon juice into the chicken salad before serving. Keep wraps individually wrapped until serving to prevent sogginess.
