Description
This Classic Southern Tomato Pie is a delightful blend of juicy tomatoes, creamy cheese, and a flaky crust, evoking memories of summer family gatherings.
Ingredients
- Fresh Tomatoes: About 4-5 medium, sliced
- Salt: 1 teaspoon
- Mayonnaise: 1 cup
- Shredded Cheese: 1 ½ cups (cheddar or mozzarella)
- Fresh Basil: ¼ cup, chopped
- Black Pepper: ¼ teaspoon
- Pie Crust: 1 pre-made or homemade
- Onion Powder: ½ teaspoon
Instructions
- Prepare the Tomatoes: Start by washing your tomatoes thoroughly to remove any dirt. Slice them about ¼-inch thick and sprinkle with salt in a colander. Let them sit for about 30 minutes.
- Preheat the Oven: Set your oven to 375°F (190°C).
- Blind Bake the Crust: If you’re making your own pie crust, roll it out and place it in a pie dish. Poke holes in the bottom and bake for about 10 minutes.
- Prepare the Filling: Mix together your mayonnaise, shredded cheese, black pepper, fresh basil, and onion powder in a mixing bowl.
- Layer the Ingredients: Place half of the sliced tomatoes in the pie crust, then add half of the cheese mixture. Repeat with another layer of tomatoes and finish with cheese on top.
- Bake Again: Bake the pie for about 30-35 minutes, or until bubbly and the top is browned.
- Cool and Serve: Let the pie cool for about 10-15 minutes before slicing.
Notes
For a gourmet touch, consider mixing different cheeses. Store leftovers covered in the fridge for up to 3 days.
