- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup sour cream
- 2–3 chipotle peppers in adobo sauce
- 1 tablespoon lime juice
- 2 teaspoons honey
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, red pepper flakes, smoked paprika, salt and pepper in a large mixing bowl.
- Mix until just combined (avoid overmixing).
- Shape the mixture into 1 to 1.5-inch meatballs and place them on a greased baking sheet.
- Bake for 20–25 minutes or until browned and cooked through.
- Prepare the creamy chipotle sauce by mixing sour cream, chipotle peppers, lime juice, honey, and salt in a medium bowl until smooth.
- Serve the meatballs with a generous drizzle of the creamy chipotle sauce on top.
Notes
For a lighter sauce, substitute Greek yogurt for sour cream. Adjust the number of chipotle peppers based on your heat preference.
