Delicious spicy beef meatballs drizzled with a creamy chipotle sauce, perfect for cozy dinners or entertaining guests.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup sour cream
  • 23 chipotle peppers in adobo sauce
  • 1 tablespoon lime juice
  • 2 teaspoons honey
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, red pepper flakes, smoked paprika, salt and pepper in a large mixing bowl.
  3. Mix until just combined (avoid overmixing).
  4. Shape the mixture into 1 to 1.5-inch meatballs and place them on a greased baking sheet.
  5. Bake for 20–25 minutes or until browned and cooked through.
  6. Prepare the creamy chipotle sauce by mixing sour cream, chipotle peppers, lime juice, honey, and salt in a medium bowl until smooth.
  7. Serve the meatballs with a generous drizzle of the creamy chipotle sauce on top.

Notes

For a lighter sauce, substitute Greek yogurt for sour cream. Adjust the number of chipotle peppers based on your heat preference.
