Instructions

  1. Combine the chia seeds, almond milk, maple syrup, vanilla extract, and a pinch of salt in a medium-sized bowl. Whisk until well combined.
  2. Let the mixture sit for about 5-10 minutes, then give it another brisk stir.
  3. Cover the bowl with plastic wrap or transfer it into an airtight container and place it in the fridge for at least four hours, or ideally overnight.
  4. Blend the fresh strawberries with a splash of almond milk and any additional sweetener in a blender until smooth.
  5. Layer the chia pudding and strawberry puree in serving glasses, starting with pudding followed by strawberry puree.
  6. Top with fresh strawberry slices, chia seeds, or whipped cream before serving.

Notes

For best flavor, use ripe strawberries. You can also add probiotics by incorporating yogurt or transform it into a breakfast parfait with granola.
