A delightful blend of sweet peaches and spicy jalapeños, perfect for toast or cheese platters.

Ingredients

  • Fresh Peaches (about 4 cups chopped)
  • Jalapeños (2-3, seeded and chopped)
  • Sugar (approximately 2 cups)
  • Lemon Juice (1/4 cup)
  • Pectin (1 box, optional)
  • Salt (1/2 teaspoon)

Instructions

  1. Prep your fruit: Start by peeling, pitting, and chopping the peaches.
  2. Get the heat ready: Seed and chop the jalapeños, adjusting for spice preference.
  3. Combine ingredients: In a large pot, mix the chopped peaches, jalapeños, lemon juice, and salt.
  4. Bring to a boil: Heat the mixture over medium heat until boiling, then reduce and simmer.
  5. Add sugar and pectin: Stir in the sugar and optional pectin until dissolved, then boil hard.
  6. Check the consistency: Test readiness by placing a spoonful on a chilled plate.
  7. Jar it up: Ladle the jam into sterilized jars, leaving headspace.
