  • 68 medium-sized heirloom tomatoes
  • 1 store-bought or homemade pie crust (9-inch)
  • 1 cup mayonnaise
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup fresh basil, chopped
  • ¼ cup green onions, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your pie crust by placing it in your pie dish.
  3. Slice the tomatoes into ¼-inch thick rounds and place them on a clean towel to absorb moisture.
  4. Layer the tomatoes into the prepared crust, seasoning each layer with salt and pepper.
  5. Mix together the mayonnaise, cheddar cheese, green onions, and basil in a bowl.
  6. Spread the cheese mixture over the layered tomatoes evenly.
  7. Bake the pie for 40-45 minutes until bubbly and golden.
  8. Cool for 10-15 minutes before serving.
