- 6–8 medium-sized heirloom tomatoes
- 1 store-bought or homemade pie crust (9-inch)
- 1 cup mayonnaise
- 1 cup shredded sharp cheddar cheese
- ¼ cup fresh basil, chopped
- ¼ cup green onions, chopped
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your pie crust by placing it in your pie dish.
- Slice the tomatoes into ¼-inch thick rounds and place them on a clean towel to absorb moisture.
- Layer the tomatoes into the prepared crust, seasoning each layer with salt and pepper.
- Mix together the mayonnaise, cheddar cheese, green onions, and basil in a bowl.
- Spread the cheese mixture over the layered tomatoes evenly.
- Bake the pie for 40-45 minutes until bubbly and golden.
- Cool for 10-15 minutes before serving.
Notes
For a twist, consider adding crumbled bacon, spinach, or jalapeños. Serve warm or at room temperature with a salad.
